About this role
About the Role The Sous Chef will support the Head Chef in the preparation and presentation of meals for guests at Thawale Lodge, Mwembezi Restaurant, Majete Conference Centre, staff catering and other events within Majete Wildlife Reserve. Based at Majete, the role requires maintaining high standards of food quality, hygiene, cleanliness and stock control while contributing to an exceptional guest experience, and acting as Head Chef in the Head Chef's absence. What You'll Do
- Deliver high-quality meals consistently, ensuring presentation and taste meet hospitality standards.
- Plan, prepare, and execute menus that cater to guest preferences while maintaining variety and nutritional value.
- Develop new seasonal 6-day menus; conduct tastings and quality control checks; manage stock with FIFO system; monitor costs and reduce wastage.
- Supervise kitchen staff, ensure cleanliness and proper sanitation; oversee maintenance requests for equipment.
- Train junior chefs and kitchen staff; accommodate dietary restrictions; communicate schedules with teams.
- Develop and execute new dining experiences (e.g., bush dinners). What We're Looking For
- Diploma in culinary arts, Food & Beverage or catering services; Malawi School Certificate of Education.
- Computer literate; experience with computerised stock management systems.
- Strong leadership, excellent communication, attention to detail; ability to work under pressure.
- Good English (written and spoken); strong MS Excel skills; experience with Tall Order and MyStock.
- Interest in wildlife conservation; ability to adapt in a dynamic environment.
- Driver's license would be advantageous.
- Right to work in Malawi (or Malawi citizenship) as per posting. Nice to Have
