About the Role
- We are looking for a skilled and disciplined Chef de Partie to run a designated kitchen station.
- The Chef de Partie takes full ownership of an assigned kitchen station.
- You will work with the Head Chef, and Sous Chef to deliver dishes of a five-star luxury standard, while supervising and training junior kitchen staff.
Key Responsibilities
- Take full ownership of a designated kitchen station, keeping it fully stocked, prepped, and ready for service (mise en place).
- Prepare, cook, and present high-quality dishes according to the restaurant's precise recipes, portion controls, and presentation specifications.
- Ensure all food leaving the station meets a five-star standard in temperature, seasoning, texture, and visual presentation, with zero or minimal dishes sent back by guests.
- Assist the Head Chef and Executive Chef in daily kitchen operations to ensure seamless service.
- Work with the Sous Chef, Head Chef, and Executive Chef to execute seasonal menu changes, tastings, and special VIP requests.
- Supervise, mentor, and train junior culinary staff (Demi-Chef de Parties, Kitchen Assistants, Commis Chefs, and Apprentices) assigned to the station.
- Delegate prep tasks effectively during morning and pre-service hours to keep the workflow smooth.
- Foster a respectful, disciplined, high-energy, and collaborative kitchen environment.
- Monitor daily stock levels at the station and prepare accurate internal orders/requisitions for fresh produce, proteins, and specialty dry goods.
- Inspect incoming raw ingredients for the station and reject any that do not meet quality grading.
- Practice strict waste management by using ingredients efficiently, keeping accurate spoilage records, and keeping station wastage within management's target.
- Store food items correctly using FIFO, with proper dating and labelling.
Requirements

Minimum of an HND or a First Degree (preferably in Hospitality, Culinary Arts, Food Science, or a related field).

A recognised culinary school qualification is an added advantage.

Proven experience as a Chef de Partie or Demi-Chef de Partie in a fine-dining restaurant, hotel, or high-end kitchen.

Strong cooking skills across a range of cuisines and techniques, with attention to seasoning, texture, and presentation.

Good knowledge of food safety, hygiene, and HACCP standards.

Leadership and team-training skills, with the ability to guide junior staff.

Good stock control, requisition, and waste management skills.

Ability to work in a fast-paced kitchen.

A high standard of personal hygiene and grooming.

Starting Salary

N150,000 / month with Accomodation.
