Assistant Food Safety & Hygiene Manager

The Assistant Food Safety & Hygiene Manager oversees the strategic development, implementation, and oversight of all food safety, sanitation, and hygiene standards across the property. This role is critical to protecting guest wellbeing, upholding the hotel's premium brand reputation, and ensuring full compliance with local and international food safety regulations, HACCP principles, and Premium star hospitality standards. The Manager oversees a team of hygiene officers/supervisors and works cross-functionally with Culinary, F&B, Housekeeping, and Engineering leadership.

Strategic & Leadership

  • Develop and own the hotel's Food Safety & Hygiene Management System, aligned with HACCP, ISO 22000, and local regulatory requirements
  • Lead, mentor, and manage a team of hygiene officers/supervisors, setting performance goals and conducting evaluations
  • Act as the property's primary liaison with local health authorities, auditors, and certification bodies
  • Present hygiene performance, risk assessments, and audit outcomes to senior leadership and ownership
  • Develop and manage the department budget, including equipment, training, and pest control contracts

Operational Oversight

  • Oversee food safety and hygiene standards across all F&B outlets, banquet/event operations, in-room dining, kitchens, stewarding, and storage facilities
  • Conduct and oversee regular internal audits and inspections; lead corrective action planning for any non-conformances
  • Monitor supplier and vendor compliance, including food traceability, HACCP certification of suppliers, and receiving standards
  • Oversee pest control programs, water quality testing, and air quality standards in coordination with Engineering.
  • Extend hygiene oversight to guest rooms, pool, and public areas in coordination with housekeeping leadership

Training & Compliance

  • Design and deliver ongoing food safety and hygiene training programs for all F&B, culinary, and housekeeping staff
  • Ensure all staff hold required food handler certifications and maintain up-to-date training records
  • Lead incident investigations (foodborne illness reports, guest complaints, allergen incidents) and implement systemic corrective actions
  • Maintain comprehensive HACCP documentation, audit trails, temperature logs, and compliance records for internal and external audits
  • Ensure compliance with local health codes, HACCP standards, and brand-specific hygiene certifications
  • Lead crisis management and outbreak response planning, including communication protocols.
  • Develop, implement, and audit hygiene and sanitation protocols across guest rooms, public areas, pools, F&B outlets, kitchens, and back-of-house spaces
  • Conduct regular inspections and produce documented hygiene audit reports
  • Train housekeeping, F&B, and Kitchen staff on proper cleaning techniques, chemical handling, and cross-contamination prevention
  • Oversee correct use, storage, and disposal of cleaning chemicals and PPE
  • Onboard new staff on hygiene SOPs and refresh training quarterly

Continuous Improvement

  • Stay current on evolving food safety regulations, premium hospitality hygiene standards (e.g. LQA/LHW inspection criteria), and emerging risks (allergens, foodborne illness trends)
  • Drive continuous improvement initiatives to elevate hygiene standards in line with 5-star guest expectations
  • Benchmark against industry best practices and competitor premium properties

Quality & Guest Experience

  • Respond promptly to guest hygiene-related concerns or complaints
  • Support quality assurance for premium brand standards (e.g., LQA) hygiene criteria.
  • Maintain documentation for audits, inspections, and certifications.
