Assistant Food & Beverage Manager
Job Description
This is an exciting opportunity for a food and beverage professional with strong leadership skills, a passion for guest service and a sound understanding of operational and financial performance.
Reporting to our Food & Beverage Manager, the Assistant Food & Beverage Manager will help lead the day-to-day operation of Cuccina & Beccarria and support the hotel's other F&B services. This hands-on role focuses on developing the team, delivering great guest experiences, maintaining service standards and managing stock and costs.

- Lead daily operations at Cuccina & Beccarria, supporting the team on the floor and ensuring consistently friendly, professional and efficient service.
- Support the hotel's other food and beverage services, including the Lobby Bar, conference room, room service and minibar.
- Coach, train and motivate team members, building their confidence, product knowledge and service skills.
- Assist with recruitment, induction, performance reviews and ongoing team development.
- Support rostering, verify team member time records and monitor staffing levels to meet business needs and manage wage costs.
- Monitor beverage costs, stock levels and ordering requirements, completing monthly beverage stocktakes and timely reporting.
- Assist with monitoring departmental budgets, controlling costs and identifying opportunities to increase revenue and profitability.
- Ensure responsible service of alcohol practices, licensing requirements, food safety and workplace health and safety standards are maintained.
- Oversee opening and closing procedures, cash handling, till balancing and the accurate operation of point-of-sale systems.
- Maintain a clean, safe and welcoming environment, ensuring equipment is well cared for and maintenance needs are reported promptly.
- Respond to guest enquiries and complaints with professionalism, using feedback to improve service and guest satisfaction.
- Deliver on the Mercure service promise and recognise our Accor Live Limitless loyalty members.
- Run regular team briefings and work closely with other departments to support smooth hotel operations.
- Take responsibility for the food and beverage department in the absence of the Food & Beverage Manager.
- Work a rotating roster, including early mornings, afternoons, evenings, weekends and public holidays.
Qualifications

Proven leadership experience in food and beverage management or hospitality operations

Service-focused personality with a genuine commitment to guest satisfaction and team development

Strong ability to build and maintain positive relationships with all stakeholders, including staff, guests, and suppliers

Excellent communication and networking skills with the ability to articulate ideas clearly and inspire teams

Demonstrated expertise in budget management, financial analysis, and cost control

Knowledge of food safety, hygiene standards, and compliance requirements

Experience in menu development, curation, and food and beverage trend analysis

Strong analytical and problem-solving skills with the ability to make decisive, informed decisions

Proficiency in inventory management and ordering systems

Proven track record of building and maintaining high-performance team cultures

Organizational and time management skills with the ability to manage multiple priorities efficiently

Flexibility and resilience in a fast-paced, dynamic environment

Preferred: Hospitality management certification or relevant qualification in food and beverage operations
