Responsibilities
- Design specialized African menus featuring regional dishes (e.g., West, East, or North African cuisine).
- Standardize traditional recipes for consistent taste, portion size, and visual presentation.
- Adapt traditional recipes for hotel banquets, room service, and fine-dining restaurant settings.
- Source authentic local ingredients, spices, and fresh produce from trusted regional vendors.
- Oversee daily mise en place (the preparation and organization of ingredients before cooking).
- Taste and inspect every dish before it leaves the kitchen to meet high hotel standards.
- Coordinate food production timing with other kitchen sections and front-of-house staff.
- Handle special guest dietary requirements or cultural food requests
- Monitor stock levels and manage food inventory disbursement to reduce waste.
